Easy Appetizer Idea

Now that summer is here it seems like we having been getting together a lot more with family and friends. With lots of barbecues and picnics to go to, sometimes you need something easy and quick to make. I found this recipe for a really simple appetizer and tried making it while we were on vacation last week. It was super easy to make and ended up being pretty tasty.

The great thing about this recipe is that it is essentially 5 ingredients: tomatoes (I used roma), green onions, crumbled feta cheese, extra virgin olive oil, lemon juice and then a few spices.

Drizzle the olive oil on a plate.


Combine the remaining ingredients.

Then mix together spices (1/4 - 1/2 tsp of each: oregano, garlic powder, lemon pepper, ground mustard, and a dash of salt and pepper) and add to the ingredients.

Pour the mixture over the plate with olive oil and serve. I served mine with crackers, but it would also be good with a sliced baguette or other french bread.

I didn't measure anything too exact except maybe the spices. I just tried for an even amount of tomatoes, feta, and green onions.
